fix: Update test version references from 0.1.0 to 0.1.1

Update hardcoded version strings in test files to match the new 0.1.1 version:
- llmx-app-server user_agent test
- llmx-app-server test helper initialize
- llmx-mcp-server test helper initialize
- llmx-tui status snapshot tests (auto-updated via cargo insta)

All previously failing tests now pass.
